Summer Fruit Rolls with Madagasgar Vanilla Tahini Dip
These are super easy and so refreshing! They're also a great healthy dessert to take along to a shower or party too! Here's what you'll need:
For the wraps:
1 pkg small rice paper wraps
2L boiling hot water
1 medium sized bowl
1 dinner plate
1 apple (julienned + Tbsp of lemon juice so it doesn't brown)
whatever other fruit you want (I used strawberries, blueberries, avocado, mango, and kiwi)
Slice and dice up your fruit.
Boil water and add to bowl.
Dip one wrap in water for about 5 seconds and place flat on dinner plate.
Add fruit of choice, mint and apple. Wrap tightly (but don't pull too tight or it might rip) like a burrito.
once all are wrapped, set aside and make your dip.
Madagascar Vanilla Tahini Dip
• 2 Tbsp tahini
• 1 Tbsp maple syrup
• 1 1/2 Tbsp coconut water
• 1 Madagascar vanilla bean pod
•1/4 tsp pink Himalayan sea salt
Slice vanilla bean down the middle and scrape out the insides with your knife blade.
Add to small jar along with all other ingredients. Mix well and enjoy!
