Roasted Veg with Fresh Herbs

Such an easy dish, just chop up whatever veggies you want!

I used zucchini, mushrooms, cherry tomatoes, peppers, kalamata olives red onion and a butt load of garlic.

Sprinkle with olive oil, S&P, dried basil and spread out on a baking sheet. Bake at 350 for about an hour or until roasted to your liking.

Chop up fresh parsley and basil and mix together.

Serve with noodles, rice, or potato gnocchi.
