This is a super simple soup to make. Simply pan fry tofu cubes in a little coconut oil and sesame seeds. Season to taste.

Boil rice noodles and set aside.

Heat up veggie broth and add miso paste.

Add fresh baby bok choy, enoki mushrooms, pea shoots, alfalfa sprouts, radish and green onion.

Spiced mine up with some Sambal Oelek.
