Molasses Spice Cookie Bites

On a bit of a molasses kick right now! Unsulphured blackstrap molasses is a nutritional powerhouse! I remember when my husband and I lived in the West Indies with Demarara sugar cane fields basically in our back yard, I searched high and low for for molasses and could not find it anywhere! Finally I talked to a local friend, whose husband worked on one of the plantations, and asked what they do with all of the molasses. Her husband said they sold it to the farmers who added it to their horses feed to give them nice shiny coats. I figure if it works for their hair, it will work wonders for ours... am i right?! 


As the evenings and mornings are getting cooler, I'm also craving warming spices...hence these little guys! Now to this simple recipe, here's what you'll need:


Ingredients:

• 2 C Rolled Oats
• 1 C Pitted Dates (approx 30)
• 2 tsp Pumpkin Pie Spice
• 1 tsp Ground Ginger
• 1 tsp Ground Clove (or 10 crushed finely in mortar and pestle) 

• 3 Tbsp Unsulphered Blackstrap Molasses



Instructions: 


• Add all ingredients EXCEPT the molasses to blender or food processor. Blend on high until it become fine. Add mixture to a med sized mixing bowl and add the molasses. Mix together with a silicone spatula or hands until it all comes together. 
• Roll into balls. 
• Enjoy!
