Hearty Miso Lentil Soup

This is such a warm and comforting soup that is perfect for those rainy Vancouver days. Hope you enjoy!


• 2 small cooking onions
• 2 carrots
• 2 celery stalks
• 1/2 head fresh garlic
• 2 russet potatoes

• 2 veggie bouillon cubes
• 3 Tbsp white miso paste
• 1/3 C white wine
• 2 C cooked green lentils
• 6 C water
• s&p to taste (I didn't add extra salt as the miso is already salty)

 • 2 Tbsp coconut or olive oil


• Garnish with fresh parsley and chillies (optional)
Instructions: • Preheat soup pot to med low and add oil. Thinly slice onion and add to pot. Thinly slice celery, minced garlic and grate carrots. Add to pot and cook down until soft.
• add white wine and cook down.
Add half of the soft vegetables to blender with 2-3 C water, miso paste and 2 bouillon cubes. Blend until smooth. Add to pot with remaining water, lentils and peeled, sliced potatoes. Bring to boil and cook until potatoes done. Adjust S&P to taste.
