Crank the Jack Johnson and get your fluffy Banana Pancakes on!


Ingredients:


• 1 C GF Oat Flour (1 C GF Oats, blended. Or if you don't tolerate oats at all use GF A/P flour of choice)
• 3/4 C Quinoa flour (or 1 C quinoa blended)
• 1/4 C tapioca starch
• 1/2 tsp zanthan gum
• 2 tsp Baking Powder
• 1/2 tsp Sea Salt
• 2 tsp Cinnamon
• 2 C Almond Milk
• 2 Flax Egg (2 Tbsp ground flax + 4 Tbsp water. Set aside for 2 mins)
• 2 tsp Vanilla
• 1 Tbsp Maple Syrup
• 1 Tbsp Hemp or Melted Coconut Oil
• 1 Tbsp ACV
• 1 Banana

Instructions:


• Preheat pan to Med heat.
• Combine dry ingredients in med sized bowl, set aside.
• Blend wet ingredients and banana. Add to dry ingredients and mix.
• Spoon 1/4 C portions onto heated and lightly greased pan and cook approx 2 mins on each side, or until golden brown and cooked through.
• Top with whatever you fancy. Enjoy!
