Double Chocolate Love Lollies
• 30 pitted dates
• 1/2 C unsweetened shredded coconut
• 3 Tbsp cocoa powder
• 1/4 C vegan chocolate chips
• 1 tsp coconut oil
• additional shredded coconut for sprinkling
Line cookie sheet with parchment paper, set aside.
Blend dates, coconut and cocoa in food processor until it forms a sticky mass. Place in plastic wrap and roll until 1/4-1/2" thick. Place in fridge to cool.
Once cooked cut out desired shape and place on lollipop stick.
Melt chocolate with oil. Spoon over lollipops and set on parchment paper.
Sprinkle with additional shredded coconut.
Place in freezer for at least 10 mins to cool.
