Ever Crack open a coconut and wonder what you're going to do with all of that coconutty goodness? I have, and this is what we did with our last one. Hope you enjoy!
• 2 C Fresh Chopped Coconut
• 1.5 C GF Oats
• 1/2 C Coconut Sugar
• 1/4 C Cocoa Powder
• 2 Flax Eggs ( 2 Tbsp Gound Flax + 4 Tbsp water set aside for 5 mins)
• 1/2 tsp Baking Soda
• 1/4 C Dark Chocolate Chips (optional)
Preheat oven to 350.
Line a cookie sheep with marchment and set aside.
Pulse coconut in blender until fine. Add all ingredients (EXCEPT flax eggs and chocolate chips) until it makes an evenly course grind. Add to a med sized bowl with flax eggs and mix until incorporated.
Add 1 Tbsp sized balls to parchment lined baking sheet and press down.
Cook for 13-15 mins.
Cool on cooling rack
(Optional: when cool, melt chocolate chips and drizzle over cookies)
