Buckwheat Blender Crepes with Avocado Pudding
I love making these for company because they look fancy but are super easy!
2 C Almond Milk
1.5 C Buckwheat Groats (Kasha) or Buckwheat flour
3 Flax Eggs (3tbsp ground flax + 6 Tbsp warm water)
2 Tbsp Maple Syrup
2 tsp Vanilla
Dash of Sea Salt (optional/not optional)
(Add 3 Tbsp Cocao Power for chocolate crepes, HIGHLY recommended!!!)
Preheat pan to just above medium heat. Preheating pan essential!
Make flax eggs, set aside.
Add all ingredients to blender, including flax eggs and blend until smooth consistency. (If making savoury crepes, omit maple syrup and vanilla)
Prepare pan surface with coconut oil or I used the coconut spray from Trader Joes.
Pour into pan and tip and turn pan to form flat circles just like a regular crepe.
Will cook quickly so flip as soon as edges start to cook and bubbles appear through middle. Cook another 30 secs-1 min or until cooked through.
Add whatever fillings/toppings you want for some sweet or savoury crepes!
